Well, it is for us anyways... the lovely butternut squash:  I wanted to share that being the end of march... and many are thinking about 'what to plant' for the upcoming season... we still have these on our pantry veg shelf and they aren't rotting or going bad. Absolutely the longest stored fresh food item we've encountered beyond stuff like nuts! It is a good source of fibre, vitamin C, manganese, magnesium, and potassium. It is also an excellent source of vitamin A and vitamin E. Some countries use them in place of pumpkin... they have a flavor that is similar. the seeds in them are smaller, but you could certainly roast & eat them like you would w/ pumpkin seeds... and that would likely add more vitamins to the gamut. We've never tried grilling them-- probably because they are a fall crop & we grill more in the summer. we use in stews/soups & and any place we can stick it. Our fav recipe is a Morrocan Chicken: which is basically browning floured chicken and then adding, onion, minced ginger, cumin, cinnamon & jar of tomatoes & a cup of chicken broth with 1 butternut squash. our batches tend to be juicy so the rice we serve with it.... or sometimes dump in the mix and crock pot it... is great. potatoes grow eyes and onions melt into goo.... but these things last! thank you Jesus
